Checking in . . .

As you can tell, I haven’t been in an “Eat at the Table” kind of mood lately, so since I don’t have the time to post a new recipe right now, I just wanted to check in and say hi.

Hi.

Where have I been? Well, (excuses alert! excuses alert!) I am in the last 13 days of grad school and my busiest time of year at work, so I’ve been slacking off on this whole cooking then writing about it thing. I did actually make a delicious recipe (oh, about 2 weeks ago) that I would love to share with you (if I didn’t have this whole homework thing to do) . . . so, hopefully I’ll be back in the next few days with a recipe for the best twist on hamburgers you’ve ever had.

Also, J’s birthday is coming up on Monday (whee!), so I’ll have to bake him a cake of some sort (though I think he’s going to be all boring and pick a cake I’ve already made, so no new recipe there). I’m hoping I’ll get back into this cooking thing when it’s a little less crazy in a few weeks.

J and I went to the grocery store on Saturday (oooh, exciting), and I decided I wanted to bake something fruity and sweet for us to have on hand for the week’s dessert. This Streusel Apple Pie from my friend Laura was just the thing. Well, except for the fact that I made it on Saturday, and we finished it on SUNDAY. So much for dessert for the week.

Another Eat at the Table Stamp of Approval

California Tortilla It is TOO HOT to cook. So we haven’t been. Seriously, I think the last time I tried a new dinner recipe was way back when I cooked that spinach pasta toss. When was that, oh yeah, May 21st! Seriously. I’ve been off my game, and thus my website has suffered. To my 12 readers: I’m sorry. I swear I will cook again soon. This weekend, hopefully. Unless my pool time gets in the way . . . which I hope it does. J and I haven’t been to the pool since it opened a few weeks ago. I always resent paying the super high rent that we do (even more than normal) when I don’t take advantage of some of the perks we have . . . like the pool. (more…)

Because once I smell a surprise in the air, I investigate and pester and do any number of things to figure out what the surprise might be. I shake presents under the Christmas tree, but I don’t go hunting for hidden packages. See the difference there?

Um, hey, I have a website?

HELLO! I have a confession to make. J and I have not eaten at the table all week, and not only that, I haven’t cooked AT ALL. Hello, frozen pizza, you’re my new best friend. It’s just been one of those weeks . . . from homework to a mandatory office party (sounds kind of funny, doesn’t it?) to getting ready for J’s family to arrive this weekend. J and I have been kind of scrounging up whatever we can find. Plus, it has been approximately one month since I went to the grocery store. Yeah, so the world is kind of catching up with the Eat at the Table Kitchen.

I did just get a new Grandma recipe that I’m dying to try, so I’m going to make that next week. I’ll be back with some real recipes and updates next week. So sorry for the lull!



The perfect breakfast for a hangover . . . or for company

French ToastSo, actually, I think this is pretty much the perfect breakfast any day. I’ve made this Boozy Baked French Toast twice now–once for New Years Day and once when my in-laws were visiting. It turned out AMAZING both times. I think it’s kind of impossible to screw this up, actually.

Banana Nut Muffins

IMG_1870J and I took a (very) spur of the moment trip down to North Carolina for Memorial Day weekend to visit friends and family (and eat and eat and eat, apparently). It was great to just enjoy good company, good weather, and good grilled food.

So, I did not do any cooking this past weekend (though our friends and family treated us to some delicious meals), but instead, I have a few recipes stored up from last week . . . today’s is Banana Nut Muffins.

Pasta time!

Spinach and Bacon TossHello there . . . today’s pasta recipe was such a surprising success that I’ve been craving it again, and it’s only been a week since we finished all the leftovers. I don’t know what it is, but for the last couple of weeks, I’ve been fixating on pasta recipes that don’t include the traditional tomato pasta sauce (or any thick sauce at all, really). Make this tonight

applesWant something easy to make with leftovers for the week? Make this pork tenderloin with apples and onions tonight, and you’ll be all set. I made this pork tenderloin a week ago as a “Sunday Dinner,” and it was a huge success. This is actually what we ate with the Mashed Potatoes and Carrots recipe that I wrote about last week (a combination suggested by the Jacques Pepin cookbook that I got both of these recipes from).

Mashed Goodness

Not that I have ever claimed to be a food photography site, but I know that when I’m going to embark on a new recipe, it’s useful to have photos of the process. But, either way, I’m feeling a little blah toward my photos right now, and these photos today kind of prove my lacklusterness. Yes, I just invented that word.
